Easy Ham and Cheddar Cheese Quiche

I am afraid of quice. It tastes good, but it looks like the devil to make. Until now! Here is an easy, quick recipe for a ham and cheese quiche! I plan to deviate soon and throw some other things in.

Easy Ham and Cheese Quiche

2 cups of shredded cheese
2 Tbsp flour
4 eggs, slightly beated
1 1/4 cups milk
1-1 1/2 cups of cooked ham (diced)
1/4 tsp of salt
dash of pepper
1 9" deep-dish pie shell

Toss cheese with flour. Add eggs, milk, ham and seasonings. Mix well. Pour into shell. Bake at 350 degrees for one hour.

Chicken a la Ritz

This is another one of the throw it in the oven recipes. Brian and I liked it, the kids were not so sure. Brian's grandmother used to soak her chicken in milk and then bread it with crackers, but I never have time to do that, so this was my improvision:

Chicken a la Ritz

Ingredients:

4 chicken breasts
1 can cream of chicken soup
4 oz of sour cream
2 cups of shredded cheese (this was WAY too much cheese IMO)
2 stacks of Ritz crackers
2 sticks of butter

Cook chicken breasts in water until done. Drain water off of chicken and tear into small pieces. In large casserole dish place chicken in bottom. Mix the rest of the ingredients except the Ritz crackers and butter and pour over chicken. Crush Ritz crackers and microwave with butter until melted. Pour Ritz mix over top of casserole. Bake at 350 degrees for 30 minutes or until bubbly. It was really good with rice!

Easy Breezy lemon Pound Cake

It's true, I have not baked hardly AT ALL this summer. With my surgery and everything, I just havent felt like it. So today, I made up for it. I have a roast in the crock pot and just experimented with a lemon pound cake. This one is NOT homeade (unless you count the fact that I MADE it at HOME!) but if you are in a pinch, it will do the job!

Easy Lemon Pound Cake

1 box pound cake mix
1 box lemon pie filling

Mix pound cake, lemon pie filling, two eggs, ONE cup of milk (I did this in place of the 2/3 cup of water that was suggested on the box) and 1/2 stick of butter. (I used a Betty Crocker mix, if you use a different one, I would just add a little more milk since you are adding more dry ingredients.)

Pour into pan, bake as suggested on box. Mine took about 40 minutes.

Glaze:
mix 1 cup of confectionary sugar with 1/4 cup of lemon juice until it is consitency you want. Remember, if you get it too thin, you can add more sugar. If it's too thick, I would NOT add more lemon juice, try just a tad of water or milk. Pour over warm cake.

The batter was delicious!!! I did manage to sneak a tiny piece as we were removing it from the pan and it is YUMMY!!!

No Boil Lasagna

I had a craving for lasagna, the homeade kind, not the kind that you buy frozen at the grocery store! So I went on a search for the easiest, tastiest lasagna recipe and here it is! You dont have to boil noodles! I did add meat to ours for Brian and used sauce in a jar (bad me, I know, but I am not Italian) but I think that it turned out pretty good. And so did the rest of the family apparently, because I caught Matthew back up at the table with a spoon while I was cleaning up!
No Boil Lasagna

2 containers (15 oz each) of ricotta cheese
2 cups shredded mozerella cheese
1/2 cup grated parmesan cheese
2 eggs
1 jar (large) of tomato sauce
12 uncooked lasagna noodles
1 pound of browned hamburger meat seasoned with basil and oregano

Combine ricotta, 1 cup mozzerella, 1/4 cup parmesan and eggs. Spread 1 cup of sauce im baking dish, layer 4 uncooked noodles, meat, another cup of saice and 1/2 of the ricotta mixture. Repeat. Top with remaining noodles and sauce.

Bake covered at 375 degrees for 1 hour. Uncover; sprinkle with remaining cheeses. Bake for 10 minutes or until cheese is melted.

Spaghetti a la Phily

I was making something else involving cream cheese todayand there was a new recipe on the cream cheese box. So I decided to give it a try:

Ingredients:
4 oz cream cheese cubed (which is half of a box)
spaghetti
1 lb of ground beef
parmesan cheese
1 jar of spaghetti sauce

Cook spaghetti according to package directions.
Brown meat, drain, return to heat. Place cubed cream cheese and sauce in pan. Bring to a slow boil and stir cream cheese into meat mixture. This is where I actually deviated from the recipe. Pur meat mixture into baking dish, add drained spaghetti and place in warm oven for 15 minutes. Serve with garlic bread.

BLT Dip

I found a new dip recipe that I wanted to try over at Kellys Korner. It is callee BLT Dip and it is yummy!

BLT Dip
2 small tomatoes diced
1/2 jar mayo
16 oz sour cream
12 pieces of bacon crumbled
2 tsp garlic salt

Mix all ingredients together and serve with crackers.Photobucket

Cake Balls


This is an easy yummy recipe. You can use any kind of cake mix and frosting combo. For this one, I used red velvet cake andcream cheese icing.

Cake Balls

1 box of cake mix
1 can of icing
1 package of almond bark (this is whatever kind would go best with your cake mix!)

Cook cake according to package directions. When still warm, crumble in mixing bowl. Mix with the entire can of icing. IMPORTANT! Refrigerate cake/icing for at least an hour before making cake balls! Melt almond bark. Scoop cake into small balls, I used a small cookie scoop. Dip into almond bark, place on platter and allow to dry. YUMMY!

Chicken Dip

My coworkers and I have become addicted to this fattening dip! It is quick, easy and delicious....

Chicken Dip

1 block cream cheese (softened)
1 large can of chicken
ranch dressing
wing sauce (I have used Texas Pete and Moore's)
shredded cheddar cheese

Mix cream cheese and canned chicken well. Pour in 2 tablespoons ranch dressing. I dont measure the wing sauce, it is based upon your taste as to how much you put in. Mix well. Pour into baking dish, top with shredded cheese and cook on 350 for about 10-15 mins. Remove and serve with chips.Photobucket

Chicken Soft Tacos

Today, I am making chicken soft tacos in the crockpot. I got the reciped here.

Crockpot Chicken Soft Tacos

Package of chicken tenderloins
1 Package of taco seasoning
1 large jar of salsa
toppings

Place chicken, salsa and taco seasoning in crockpot on low for 6 hours,
shred chicken, serve with hard or soft tortillas, lettuce, tomatoes, and whatever else you want on them!

Catalina Chicken for the Crockpot

Of course the cooking plans for this week went down the drain. A) I wasnt prepared and B) It's pointless to cook a meal for a large family when only 3 of us are home. I DID manage to make crockpot chili on Tuesday and it must have been good because the kids each ate 2 or 3 bowls. Monday night we had chicken salad and Thursday night, we had baked spaghetti. Brooke had a basketball game Friday at 6, so we wound up at Waffle House. I am making up for it tonight though, by cooking Catalina Crockpot Chicken. I mixed it up and went back to look to make sure that I was getting everything, I just KNEW I was forgetting something!

Catalina Crockpot Chicken

4-6 large chicken breasts
1 bottle of catalina salad dressing
1 package of dry onion soup mix

Pour catalina dressing and onion soup mix in crockpot. Stir. Add chicken. Cook for 3 hours (high) or 6 hours (low).

I've been really bad about cooking since going back to work. I DO cook, but it it is usually something quick and easy. I did find a new and very inspirational blog called www.weekbyweekmeals.blogspot.com. She plans her recipes by the week! I also took the time today to make a new background and header for the recipe blog. What do you think?
